Most of ya know that I took last weekend away from the phones and computers, but not from the smoke.

Fri night I headed about 80 miles north to my dads and cranked right into cooking for sat afternoon.
I hit sams club on thur, picked up brisket, pork shoulder, chuck roast, bacon, and shrimp and hotdogs to go inside the bacon.
And beans.

I rolled in around 8 30 and started the prep, I had taken the trailer up the sun before so I didnt even have to mess with getting it parked. My son and my dad did that thru the week. I split up the brisket, I like to cook my brisket as a flat and a point. Sometimes I will stack them back up and cook that way but most of the time I lay them flat out.

Nothing special on anything. Just EVOO and dry rub, no injector this time.

I ran my temps to 350 and loaded the cold meat and two pans of beans.
I use my beans as a heat sink for the cambro boxes.

The temps leveled out at about 240 ish, give or take. I ran about an hour between adding a log.
The first load was freaking fantastic, I laid a bed of lump coals about 4 inchs think the width and length of the firebox. It came up, held 350 till I loaded the meat and cranked the vent down. Then help 240 ish for 3 hours. Its really hard to reload like that without getting coals in the dry grass. :shock:

I planted my happy butt in the center gray seat on the front of the trailer, reclined it and kicked my feet up on the trash can and fell fast asleep.
Young son was in the recliner on the front patio.

The new maverick thermo was working really slick keeping me up to date with the high and low cook temp alarm. I sure wish the cheapo's had a low temp alarm.
Low is just as important as high temps but the other thermo builders dont think so.

Dads wife came out early and counted her cows to make sure they were all still there......OMG LMAO I bet she worried about that all night.

Brother in law showed up about 9ish and had meat still in cryovac. I said sucks to be YOU, better get to prepping. I did help him do the brisket he brought since I wanted it ready for heat before noon.

I should have more shots of the food table when they send me there pics, here is the ones I took while I was bored. Gonna load them inthe next post.

The gray ones are the left overs from a S 10 blazer. They have to stay now, I really love the way they sit.

Damn tasty looking - almost painful. The fruit cup I had for supper doesn't look so good anymore... Guess I'll have to put on a couple butts this weekend. :|
