Wood smokers

I was chatting the other day with alleyrat and told him I was thinking of building a wooden smoker. I told him I wasn't sure if it would be round or square. He told meto make it round so we could call it a rottiserry when it catches fire and I kick it over it rolls down the drive. I have the basic principle worked out and leaning towards round just for the challenge. I am going to use an insulated fire box and a fireplace metal chimney for the tube to the smoker. Any body care to put in their two cents worth,

My only concern is that the wood will dry out to the point it will split after a few cooks.... :-s


And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D

I will use metal straps to hold it all together even on the doors. and plan on using a hard wood like hickory or pecan.
