Smoking a Turkey in a UDS

Post by Bigfoot Yancey » November 19th, 2012, 10:54 am

Frank Cox made me a smokin' UDS.
I've been pretty excited about doing a turkey on it this year. As I sit at work daydreaming about this endeavor- something just occurred to me.- maybe the bird won't fit. It's a flat lid. I'm stuck at work- no way for me to tell.
Oops. Anybody have any idea?

Thanks all.

Matt

Do you have an old dome lid from a weber grill or one you might be able to borrow? I have seen the weber lids used on UDS in the past but I have never done so personally. just a thought

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

I thought those UDS's all had a second set of bolts down low so you could set your grate further down giving you all the clearance you need under the lid....?

If not then hang your grate below the bolts that ARE there with some stiff wire like you would buy at the hardware store to buy yourself the extra clearance for this cook. Hint: Measure the bird first - just sayin' ... :D

Another thought, If you aren't going for "traditional" looking bird on the Thanksgiving table, is to separate the breast from the rest of the bird and distribute the parts around the grate. If you do this probe the leg/thigh sections because they will be done before the breast will be - if you stay with it you shouldn't have any problems.

And on the eighth day God created barbecue …. because he DOES love us and he wants us to be happy. :D

I'd say try setting the bird in there. If it doesn't fit, then let's hope you kept your receipt. Take it back to the guy and tell him you want a cooker for all your possible uses.

Sounds like a shade tree build to me. =)) Who doesnt use two racks and a dome lid? :D
Ok all :BS: aside, I would bet the wire trick would work, if that great builder didnt put in two sets of pins for racks. Solo is right you could also use a dome lid from a Weber. It does take a little mod work tho.

BBQ is just smoke and beers!
Usually more beers than smoke.

It might cost you a trip to Rolla, but I can hook ya up with a dome lid. you could get another set of bolts and install a lower level also,
or you could spatchcock the turkey.....

dudes- thanks for all the wisdom. I'm thinking I can pull this off.
Ill hunt around for a weber lid, Soloque. great Idea, Rick. That sounds
like a good alternative if I can't find one. You bet I saved my receipt, Smokinff.
I hear that, Smokeone. sounds like it, huh?

I should come down to Rolla anyhows Frank. I could use some Good 'Ol Boy knowledges n cultures.
I'm gettin' soft.

Sounds like one of them Taiwanese knock offs, you might want to keep a fire extenguisher handy just in case .... makes sense I guess ... not likely they have actually ever seen a turkey over there. Probably smoke a decent dog or cat for sure.
