Anyway after I got some coals in there it held a perfect 250deg. Just what I wanted. Still have to make vents and make a damper but she is almost done.
Wood only no charcoal ,, it was red oak and I did load it up pretty good, the gauges I bought at lowes for $8 bucks a piece charbroil brand made where else.... China
I would say the gauges are not accurate at all. You may want to invest in a good thermometer like Tru-Tel. They are available all over but Smokerbuilder.com has them at a great price.
Yep it did dc , which is over 500 degrees f. Lol ,, anyway , I'll get a new gauge soon and we will see what's going on. I believe it'll serve it's purpose anyway

Those thermos are usually off by 80F one way or the other to my experience... I have used a pile of'em on the UDS Builds. The paint may not have burned off at 600*F because it was a dry heat. most enamels tell you not to use them on surfaces that exceed 300F but if the heat is indirect or dry then it will still hold up. usually it takes direct flame contacyt or hotter direct heat to make the paint bubble off. similar to a heat gun aimed at the paint.
How do you like the results? Would you do anything differently? Does it cook well and maintain heat easily? I'm trying to build something along the same idea and love the simplicity of using barrels. Any pros and cons?
