I'm Lee and I live in Shropshire in the UK. Been cooking low and slow for about ten years now on a WSM, still using the same one now
Did a class with Harry Soo last year and also got the chance to cook with him at a comp in the UK. Needless to say I started to compete on my own this year on the WSM. My team name is Serious Lee BBQ, I have a Facebook page but I keep forgetting to take pics and update it when I cook
I did the KCBS CBJ class earlier this year and have only had the chance to judge at one comp so far, I think I'll try to do two judging stints a year just to keep an eye on the competition.
Built a gravity feed earlier this year, the thread following the build is on Smokerbuilder Gravity Feed. I had hoped to use it for comps but it's a bit on the heavy side and it resides in my backyard because of this. I do plan to build a smaller lighter version but I'm not sure if I'll use it for comps, I like the WSM experience. I've got plans to build other smokers too next year but I think I'm going to get stuck with too many ideas and not enough time
I use a home made blower on the WSM and it works fine but I'd like to get one with more knobs on, maybe I'll get one next year after I've asked the question 'Stoker or Guru?'
