Cooked for the family Christmas Eve, 2 racks of spare ribs, 3 Boston butts, and prepared a 10 lb. turkey, a few whole chickens, a dozen bakes potatoes, a stick of bologna, and a whole ribeye loin...
Considering it was my first time to cook on it, everything turned out pretty well. I cut the chicken into quarters and they cooked a lot faster than I expected, so I over cooked them, but they still turned out moist.

I got an "Oh Shit" on my ribs, so I think that means they turned out well.
The butts turned out pretty well, tons of smoke ring, really pretty. Turkey was good an moist.
No pics of the potatoes, but they didn't really need butter, it's hard to beat smoked potatoes. The microwave and oven can't touch it. The bologna was a little salty, but that had more to with the cheap brand I picked up.
First ribeye loin I ever cooked. There's a few things I'd tweak, but it turned out pretty good.

Thanks for the comments... I never really had a smoked ribeye, the center taste just like a normal but prime rib, but the outer crust was something to behold.
Now for the add ons... Wood rack, fish cooker, charcoal grill, and a prep table.
For the "table" I will have a shelf that will extend out from the cooking chamber 12-18", then I'm going to have a 12-18" section that will fold up and lock to double it's size. I need to scout for some ideas to achieve this, so if anyone knows any documented rigs with something similiar, feel free to point it out.
I was looking at fish cooker to add to the trailer, mainly for starting the charcoal chimney. But I wouldn't mind using it for other things... Anything specific I should look for, or should I just buy the cheapest one at Lowes?
While cooking at family, I pulled some walnut planks out of the barn. Dad had it cut off land a while back, should make for a good looking shelf to go in front of the cooking chamber...
Man, I wish I had an Academy's close by, I love that place... That'd be a great price, the one at Lowes is ~$50...
What material would you guys build a small wood rack out of? I'm going to do a 40"Wx24"Dx20"H I thought about framing it in angle and using expanded metal for the sides. What size angle would you guys use? I had some 3/4"x1/8" but I think it's too flimsy...
