Hey Pros...really any one. Now that I have my toy bought and my up coming cruise paid for ITS GO TIME on building another smoker. I am going to do reverse flow with a warming cabinet. I have two to choose from st build I have 48x30 diameter w trailer or 48x24 diameter with its own trailer. Really all I need to do is mount them to the trailer cooker style...they are in the center of the trailer and build the ends then cut doors and make the guts of the CC. Neither one will be too much fabrication.

SO the million dollar question is which one do I build????????????????
The 48x24 diameter will be smaller = less food, but with 2 racks and a warming cabinet it will cook more than joe blows cooker.
BUT wait it will also be cheaper to build!!!!

The 48x30 diameter with all the same bells and whistles will be one dang fine cooker but will cost more and maybe a little harder to make due to the weight of the larger warming cabinet.

So Gents I would love some feed back/ opinions.
Also I would like some ideas on putting a flat top grill on the end for breakfast stuff and burgers and such. I look at just getting a propane one so all of the burners and knobs would already be in place, or is there a way to heat up a piece of stainless with charcoal?

Humm I'm only stating what I have been doing I have a piece of pipe 30x54 and want to build a rig wit it but have been building smaller patio types trying to work the bugs out of the building process cause for the same reason you stated cheaper once I feel more confident I will start on the big build just want to get all my ducks in a row first so once I star I have a good idea of where I'm going with it if that make any since

I just recently built a 25x48 and I can cook more meat than I can afford to buy on a regular basis. I'm not sure exactly what you have in mind for your griddle but you can definitely heat a piece of stainless plate with a small amount of charcoal. I used to have a 12'' boat trailer rim and a piece of plate that I would used to cook breakfast on while we were camping and it worked great.

In your example - go with the smaller one. It will pay you back in savings many times over compared to the big one - unless you're catering or cooking for the church or something like that….. Besides - 20" diameter is optimum - anything over that is just harder to reach across….. imho :D

Thanks guys. I will think about it some more, which may be a bad thing lol. I probably shouldn't start anything until after our cruise in 2 weeks. I'd probably get in trouble :oopssign:

Be on the lookout for a used flat grill from a restaurant service company. the ones in the restaurant use 3/4" ironized stainless. they don't get much for them as scrap value so they would prolly part with it for next to nothing. grind off the junk on the bottom and whammo you have your flat grill! tack it to the top of the firebox or build a charcoal grill bottom under it
