Saying Thanks!

What to say thanks to everyone on this site for their knowledge and experience. I just finished my first reverse flow build. I have built other types of smokers in the past, but not reverse flow. I learned so much from this site and made the build go very smooth. Fired it up last night for the seasoning and test run. Everything went well. Ran it at 300 for an hour, then dropped it to 250 for an hour. Played around to see where she wanted to run. It seemed to run wherever I wanted it to. Temps from left to right are pretty close. Maybe 10 degrees difference at best. Cant wait to do some cooking on the new toy this weekend. Needless to say, I am really happy!

Now you'll have to make up a big batch of foiled grits….

Now Gizmo, I hafta tell ya that I have been smoking all my grits without foil for some time now and I think they are way better that way! if you really think about it you're really just braising them when they are in foil anyway

Got the smoker moved to its permanent home. Cooked some thighs and they turned out good. Forgot to take pics though. Then Saturday threw some country stye ribs on and they turned out good. Once again forgot to take pics LOL. Sunday, I cooked 3 racks of spares, and about 25 wings on the top rack. Everything turned out good. Left the ribs in the foil about 30 mins too long. I think I am gonna say to hell with the wrapping for the next cook.
Smoker performed excellent. recovery time after wrapping or putting the wings on is about 2 mins to come back up to temp. I really cant think of anything I would change on the performance or the design.
