This all turned out pretty good. Wife got home and agreed the price was crazy cheap since she is getting 3.69/lb at her market. Then my dad calls later in the evening and places an order for 12 slabs to be brought up at Christmas. Briskets go on sale next week at my wife's market so I gotta get some smoking done to make room in the freezer. Not sure on how good that math works since I have to freeze the vac packed slabs when they are done but in my mind there will be room for a few packers.
If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone
Smoked some Butts for family and friends today. Neighbors ended up buying about 7 themselves so no extras for my freezer but had a blast and I had planned on getting a few calls during the day Fire was lit at 4:00 AM, smoker was 375 F by 5:00 and the butts were sealed tight by 5:15. Temp actually fell down to 240 during the initial load. Here is a snap shot after 5 hours when I rotated shelves. Will be pulling at 4:00, ran 11 hrs at 250F. No wrapping just 1 rotation and never open the door again. I'll grab a pic right before they get pulled.

Good thing I smoked a few extra. Ended up with only 2 to put up in the freezer. Neighbors are fairly predictable.
I trimmed these pretty close and mixed in extra brown sugar on the rub so the bark ended up being fairly crispy :
