Thanks for the kind words guys ... I have seen y'alls cooks you post and I'm in the learners bracket in this group. The hens are one of my stand-byes, they get a 4 hour brine and a generous olive oil bath before getting tucked into the smoker for about 3 hours


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

Thanks Pville. I'm gonna do another one in a few weeks. My wife is special ordering a 15 pounder since that is what my dad usually serves up during the Christmas get together and I want to zero in on my temp and time. I'm hauling Pops up to Illinois in a quest to not eat highly expensive shoe leather this year.

I hear you - I have an Aunt who believes that Thanksgiving is not complete without an Organic, Free Range, stringy, dried out, overcooked Turkey on the table.

OK, so the weather finally cleared a bit and I was feeling a bit on the hungry side. Went to Sam's for some Beef Goodness

After some light trimming, everything was lathered in Olive Oil and crusted with some of Irv's Smokehouse Prime Rub

Pops is cruising at 270F and and the clock is running. Smoking with a blend of Hickory and Persimmon. Probably have the final pic in about 4 hrs when it hits 138F. :kewl:


If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

OK so Pops settled in around 295F tonight and the internal temp hit 140 right at 5 hrs

I still need to remember to pull at about 135F as internal rose into more medium 148-150 during the 30 min rest.
Nothing Rare on this one

Still didn't need a knife, knocked out some onions and mushrooms and the wife contributed her hashbrown casserole
