Update and question?

I have built my second fire in my smoker tonight. it has taken me 6 months to get here. If i can figure how to post pictures again i will post my smoker ill try.

My question is I have already installed my thermometers of course. Does it matter on the installation where there thermometers are located. can they be to high or to low? and When I purchased the thermometers do i need to calibrate them or do they come set?

1) I mount the thermometers close to my rack height but some guys mount them higher. 2) If your thermo's are able to be calibrated then I would check them in boiling water but not all thermo's can be calibrated.

I like my thermometer to be just above my main cooking grate. As for calibration most don't do that anymore but you can compare it to a good digital and if nothing else you can just remember the difference.

I spent yesterday and worked on my trailer a little more and I finally got a latch on my firebox door. I had some scrap steel laying around and built the receiver on the trailer still trying to decide if I like it I'm sure it will look much better when it's all painted as of now I currently have rust, green, red, black, and a little stainless. Lol looks like Frankensteins smoker at the moment. :grillin: What you guys think of the hitch main reason I did adjustable is right now I have a Nissan frontier next year I'll have a full size dodge.

As an avid American motorcycle "enthusiast" I have had too many people I know trailer their bikes around??? While the trailer stayed the same each year, the tow vehicles changed. Sometimes the trailer is scraping the tow bar and other time dragging the tail.

Adjustable is the answer

I had small cook yesterday, and for my very first cook ever the chicken turned out excellent. I smoked it with cherrywood awesome. And tonight I took the leftovers and made smoked chicken and chorizo tacos yum. The tank is a 500 gallon propane tank chopped in half. 36 in diameter. Thanks

I cooked a turkey today. All and all it went pretty well, at least it tasted amazing and was moist. Needed more smoke. I have been struggling with temperature I put an oven thermometer on the bottom rack and have been going off of them which halfway through the cook I realized everything is way to hot I cooked a 14 lb bird in 2 hours :) it turns out that my smoker has the ability to get very hot I've had it up to 600 degrees. While learning my smoker I found it amazing how by just closing the dampers 1 inch how much it will lower the temperature. I like how the smoker is so responsive when i want cold I get it when I want hot I can have that as well. Thank you for all the work that goes into this website, all the plans that are available, and all the information that can be collected by the pit masters! Thank you.

I know what to do on my next cook, and I'm certain it will work a light build kind of went on my next cook will be next Thursday. I'm heading elk hunting Monday, and deer hunting Friday. I'll post my results.

I am wondering I have read a few post about insulating the fire box. What are your thoughts on it. What are the benefits? Is it worth it? I want to have the best smoker I can build if it would benefit me greatly I will head that way.

Insulating the fire box does help conserve in fuel consumption and seems to help with controlling temps...

Nice build! I too am considering modifying my 500 gal build to include an insulated fb. I figure it would be tons easier before the FB is actually built to incorporate it, but is it cost effective? How many people have started with a plain ol' 1/4" thick FB and then turned around and insulated it? Did the difference offset the expense?
