Looks good, but I would eliminate the water feature. I've built tons of cookers both with and without water and found no advantage having a water pan. Everything I build today is waterless.

I disagree with poultry. I use my water pan on turkeys and chicken and have found favorable results.
It will be removable without effecting the cook chamber. If nothing else it will serve as a drip pan.
im with clover ridge on the no water pan, ive done chicken as well and noticed no diferance with or with out, much like beer can chicken, didnt notice any differance
You could add a maze if you go with 5.5" X 6.5" hallways leaving a full 1" gap between the 2 hallways. It would burn down 19" and back 19". Should give you several hours burn time.

I got my insulation in today.
I finished the top door and hung the bottom door while the top one is drying. I will hang it and finally build a fire.
