Hey everyone. I love to bbq and smoke meats like crazy.

I live in Pensilvania. I like to build things rather then buy them.

I build and sell custom poker tables on the side.

I cooked some ribs for its maiden voyage.

They turned our great. I was chasing temps all day. It would not keep a steady temp. Either it was to high or to low.

I need to make a New basket and seal the top better. After that I will try again and see what happens.


The hooves were elk I think. They guy I built that table for is a doctor and a big hunter. He has lots of heads on the wall and stuffed full animals all around. The room wasn't completed so that are laying around when I dropped the table off

My first experience with my smoker was similar but it was because I was changing things way too much. I quickly learned to just let it sit for a while and not make constant changes. However with the UDS I am guessing you get much quicker reactions from the smoker so maybe you do need to make some changes?

I think it has to do with my basket.

I tried to set it and let it go for a while but it would go down to 150 and when I opened the valves up it would not budge. I would have to open the lid get more air in then it would go to high around 275 and up. I would be going back and forth opening and closing.

I'm building a new basket and will try some ribs again to see how it does.

Let's see a pic of the basket. How long were you givin the drum to make changes in temp? Mine usually takes 10-15 min to notice a change after I have made an adjustment. Watch your wind direction too. If the wind blows straight into your inlets or exhaust, that'll make you say bad words too. :headwall:

I had an old cheep smoker I used parts from

I bought a cheap $15.00 grill to use for the base

I used some hose clamps to secure it to the bottom tray. It sets in about 2" off the ground.

I used a mid section of an old grill smoker and cut a bunch of holes.

I filled the basket with charcoal and used the minion method to light it. I put about 7-8 pieces and light them in a chimney starter.

Then I pored them on top in re middle of the basket wit a couple chunks off apple wood around it.

I think my basket is not letting enough air flow to go through.

I let it go about a half our or so between changes.

Maybe try some holes in the upright of your black base. That may allow a little more air to the bottom of the fire.

I thought about that I can try that first before I go spend $ on some new material.

I put holes all around the base and that worked like a charm. It held temps much better thanks for the help.
