275 oil tank smoker revisited

Decided to fire up the trailered smoker today for some ribs tonight.

Several things to comment about this smoker. Yes it's a big unit for just 3 slabs but that's what I have ready so until the gravity feed is ready, this is what I use. ( and yes, the gravity feed will be overkill as well). It's interesting to note though that the smoker is just so rock steady and with repeatable results that it is easy to modify a recipe knowing the smoker will just do the same thing it does every time. The temps are so easily predicted and the recovery is quick. Tonight I used only 1 can of lump charcoal to start the fire, 8 small applewood splits and another can of charcoal for the foil period. Not much fuel at all for 6 hours of use. It is Such a pleasure to know that The performance is so well tuned. The dimensions in the plans could not have been more perfect.

Dinner was great.

That is one nice rig,,,, not many oil tanks in arizona to use. I could see that working real good...... nice job on the ribs too Puff.

Ups man delivered a few things to my wife and daughter today and as mentioned, my house is down a dirt road thick with trees and quite sound proof under .357 cal. Those get a bit louder as the bullets get larger. but the driver mentioned that as he was pulling in towards the house, he could smell the BBQ pit about 175 yards away. I told him we smoked a few yesterday. He's anxious to get started but he has to drop and run. He chats back and forth to the truck ...then he's gone. Driven away, not shot :o
