I think I am done with the smoker finally. I just need some stuff on the trailer, but I burned a fire today. Oh I need to put thermometers

I have been working a lot of overtime at work so I haven't touched this since Labor Day. This is what I planning though. I have an old barrel grill that doesn't weight too much that I might put on there to do some charcoal if I want and my flat top grill. If do put the grill on there I will cut the legs shorter.

Finally got the smoker finished and seasoned so I cook on it. I have a few things left on the trailer. It held great at 300. Then I jacked it up to 500. Works great. My area Knights of Columbus is having a benefit cook off in November. Now I can enter! :grillin:

Almost done. I finally got the flat top mounted. I found some scrap 4" x1/4 thick angle iron and made a type of raised mounting surface. I bolted the flat top grill to the square I made.

Oh and my buddy hooked me up with some pecan, which is hard to come by in the Texas panhandle. I usually use mesquite. Excited to try it.

Looking good, when I lived in Texas it was about all I ever used was mesquite. It was everywhere and nothing else was.

Well I am doing the first cook. I put one unlit chimney of charcoal and one lit chimney along with 3 splits of pecan. Temp has been 340 for almost 2 hrs and the wood is hardly burnt. This thing seems to run very efficient thanks to the pit calc. I checked my thermometers in boiling water this morning and they were spot on. Now they are exactly the same during the cook...so we have even temps! I am very excited it all came out great. Now just the last few things and paint and she is done. I guess I need to name it since it has taken so long to build lol.

Sorry this is not a good picture the sun was pretty bright.

We'll if anyone cares I am finally working on this again. I tried to post pics and it said it was too big. I started off putting a piece of 18" pipe I cut in half so I could make a small charcoal grill. I put it on the side of the smoker cook chamber.
