First Smoker Build, Hybrid Rotisserie and Shelf Smoker

Post by YTQBBQINC » December 15th, 2015, 8:45 am

Started the build on my first smoker. 6' long by 40" diameter, 10 gauge cook chamber that will be sectioned off into basically two separate smokers. The left side will be a five 32"X12" rack rotisserie and the right will be a standard three shelf smoker with tuning plates. Rotisserie will be powered by the Dayton rotisserie motor with a direct shaft mount. Haven't figured out the inside attachment yet. Can't find any sealed barrings that can handle the heat and won't taint the meat with burnt grease. Will probably just have the 3/4" shaft go into a 7/8" sleeve attached to the inner divider wall. Will update as I go.

Thank you, this is going to be an interesting build. Already have changed a lot from my original design. That stuff happens though guess. Paper vs real world.

Changes happen alright. lol It is hard for me NOT to change it as it goes. So what fuel are you going to use in this rig?

I'll be using a charcoal bead with oak logs in it. Haven't decided if I'm going to go with a propane starter burner or not yet.

Not saying I didn't think the firebox would line up or anything but damn it was a good feeling to see it line up with the cooking chamber. Haha

Cadillac Smokers has a similar model like this. A friend of mine bought one. Really nice!

Cadillac has an gas jet burner package unit. Is that what you're going to do? I ask because I understand many comps don't allow gas.

Probably not. I use an 800k btu torch to light my coals. The main comp I go to here in Amarillo allows gas to start the fire but that's it. Too much money and work for the slight convenience.

Me too...this is a future build of mine! You heat a smaller area and can load it up!

I still have plenty to do before mounting the lids but I have a slight issue. The cook chamber is made of rolled steel, so when I cut the lids out they relaxed a bit. I had them rolled again which got them close but on both of them one side is off. Ones too tight and ones a little wide. Anyone have any tips on tweaking them to where I want them? All I can think of is a large rubber malet for the tight one and a ratchet strap for the wide one.

I've seen people use a floor jack and a chain to bend it to fit right. I normally use my 30 ton press, which is just a jack with a framework to hold it on target. Remember it is steel it won't go easy but it will do whatever you force it to do.

Thanks for the info. All I could find in town was a 12 ton. I think that'll get the wide lid taken care of. The tight one wI'll probably go the way of the chain and jack.

Cut the openings for the firebox and started welding it to the cook chamber.

Really nice!

Are you going to have some way to close off the opening to the CC for temp control or do you have something else in mind?

Not 100% yet. May take the firebox openings, cut them in half, put a lip on them and the weld or bolt them to a couple rods to work as a baffle. Probably connect the two rods on each side with a chain and sprocket. I'll make up a scetch of what I'm thinking and post it.

Got it up off the ground. Think that's about where it'll be progress wise till after the new years.
