Here's a shot of the set up ready for smoking. I added some thru bolts in the back of the shelf to act as a stop to center the drip pan under the drip edge.

Oh, and what a coincidence, a buddy of mine called as I was finishing up and said he found pork shoulders on sale for $1.29/lb! Needless to say if the snow on my deck ever melts pulled pork is on the menu.
BTW RC, I had to jack up the bolts to 1.25" to give the burner some breathing room. We'll see from there.

I underestimated how much having an inch air gap for insulation would affect BTU needs. I'm seasoning the smoker as we speak and I can't get it below 275 w/o the wind blowing out the burner. I'll try plugging some of the holes in the burner tomorrow before I do the inaugural cook. Considering it's only ~40 degrees outside, come summertime it'll run even hotter. Other than that, so far so good. I'm able to move it around easily on the wheels. Pics tomorrow.

It's much easier to find high output burners than others. They tell you max output in BTUs but not how low they'll go unfortunately. I also want to use this as a pizza oven so it needs to get pretty hot, hence the overkill. Since the burner has a double ring of holes I'm going to run some screws in the outer ring and see what happens.

I plugged every other hole on the outer section and it helped but I may need to do more. I also had to raise the bolts for the skillet as the wood chunks kept igniting. I'm getting another batch of Hickory tomorrow from a buddy so we'll see what a fresh batch will do. The stuff I have now is pretty dry.
Ribs and chicken tomorrow so I get to tweak again.

Q looks great! I too had issues with my home built gasser burning my wood chunks I raised the wood pan 6" above the burner, made a sealed box with holes in the top with no success , best luck I had was making a smoke generator.

The tweaks I made raising the skillet and blocking off some more ports worked fine. What I still need to try now is running it hot to see how high she'll go.
