A disposable aluminum pot pie tin.
Push a large tortilla down into it.
Pour about a 1/3 cup of precooked sausage crumbles in over that.
Add your favorite rub or seasonings or diced scallions or whatever or nothing works too.
Pour in 1/3 cup beaten egg.
Bake about 25 minutes in the smoker at about 275ish.
Remove and cover each with a couple sliced of your favorite cheese (my favorite is smoked provolone then mozzarella on top to brown up nice)
Back into the smoker for another 15 minutes or so to melt/brown the cheese.
Remove - enjoy :D

Looks great and can't wait to try them....I'm thinking I might add some diced potatoes that have been pan fried first. Call me crazy but breakfast needs potatoes!

I gotta report back that I just couldn't wait. Got up this morning and just happened to have some tortillas on the counter. Too lazy to fire up the smoker so threw them in the oven. I must say they turned out great.

I looked in the 2016 gathering thread & couldnt find the desert recipe, either I had a boy look or I'm going blind(probably both, lol) :?

I like to make pico de gallo and put about 2 tablespoons on the eggs and sausage. One note to self don't use a large tortilla, use a toco size. The tortillas need to be room temperature or higher. I put the cheese on when I put it in the smoker. When the cheese looks so good you want a bite take it out at be careful it's hot and really good.
