Not sure what the beating a dead horse is about lol, but long hours yesterday and she is finished minus 3 parts that should be here this week.

@The Czar, as soon as I convert her to a trailer I will gladly head on out to Missouri so you can "Show Me" how I should really be using her =)

After looking at various build pictures and threads, and taking the advice of those here, I mounted the CC thermometers about 4" above the top grate and will monitor the bottom grate via remote thermometer.

I found these couplings on Amazon and they worked perfect for the thermometers.

After checking everything I stripped out the thermometers and she is ready to go to the sandblaster tomorrow.

Once she gets back from the sandblaster tomorrow I will start the seasoning process and play around with cooking temps to test how well she holds temp at various parts of the CC and warming/rib box.

All goes well Friday night will be the first cook, a couple Butts, and a Brisket.

Really nice looking cooker! I know you can't wait to try it out and make smoke! Wish I was there for samples!

If you really want to impress me… Come to the gathering this fall in Kansas… And I can definitely drink a beer with you and give you what little knowledge I have on cooking some food… LOL

Well... she is off to the sandblaster. Tomorrow morning she should be naked and ready for seasoning!

Quick question....it looks like you used 1/2 inch angle for your racks.....is that working out ok? I think my plans call for 1 inch but smaller would be lighter.

It's actually 1/2" square tubing. So far they are holding up.

Got her back Friday and thought I would try and cook. Turns out I have a little more to do before she is ready.

I did pick up something to break her in.

Thanks for the reply.

Looks great....noticed you are missing a Handel on the cook chamber.....what are the plans for that?

By the way, those smoked white plastic bags usually need a marinade.....they come out pretty dry otherwise! :chef:

Thanks Pete. 18lbs before trimming. Hopefully it turns out great :)

Dirty, my momma always told me not to show my butt in public so I put them in the plastic bags :). As for the handle I am cutting out some nice tabs in which I will mount an oak handle between them.

Right now it is being stored in the garage. Not sure how well that is going to work once it really gets seasoned =) My plan is to soon convert it to a trailer smoker and build a trailer for it which I will then keep it in our barn.
