So much drama with this door. Bottom right corner is about 1/2" out preventing a good seal. Had the door strapped to the CC so did not notice this before welding the hinges in place. I may have to cut the door off and do the jack and chain method if this strap attempt does not work.

Tonight marks the first night that I do not have anything planned to do on the smoker tomorrow.

I got the door close enough that when I replace the seal with a rope seal I think it will be good. If not I will put some latches on it.

I got the pigs welded on, did the final welding of the dampers and cleaned up the spatter. It was time to paint.
I did not paint the cart as I plan to move it to a trailer before winter.

I really like the Hog brackets, also are you worried at all with the cleanliness of wooden handle? What about the longevity of life for the wood rotting. I did a bracket on each side on mine and put a 1/2 inch diameter 2 inch long tab on each bracket and put a galvanized 1 1/2 inch pipe for a handle. The tabs allow the handle to free spin so as i open the door the handle rotates with the position of the door.

The wooden handle will be stained and sealed with polyurethane. My hope is this will protect it from elements and what not. Since it is only held in place with 2 lag screws my thought is this handle can be replaced easily when needed.

She is complete! After spending about 8 hours today getting her dialed in I am ready to cook. I started prep work tonight and got a couple butts rubbed. Will carve and rub the brisket tomorrow.

What an interesting first cook... and I mean first cook. Never smoked meat before so I figured I would go all out. Got the butts on there about 10:30pm and in trimming the 18.7lb Brisket realized that my estimated 18 hours to cook it was going to be way too long since it lost a ton of weight after trimming. This Brisket had a ton of hard fat on it. None the less, got it rubbed and let it sit out for a good 4 hours before putting it in at around 2:00am.

Fought the fire a few times overnight, completely lost my coal bed at around 4:40am Sat there with a propane torch and kept the logs on life support until I could get a new coal bed going. Ended up losing the coals again about noon but this time I just threw in a white chimney of charcoal. I hit my dinner time and that was what was important. I ended up taking the Brisket off and wrapping it about 3pm, and pulled the pork off at 192 degrees, wrapped it and threw it in a 250 oven for the last hour while I took a shower and a tiny nap. All in all it was a great experience. Definitely not something I want to do again alone. was miserable the next day. But here are some delicious q pics for you to enjoy.

Food was delicious! Fed about 15 people with enough left over for lunch and dinner last night for my Wife, Daughter and I =)
