New Build Australia

Post by 10pinto » May 16th, 2016, 4:22 am

Hi All, just starting to do a first build.
I have a piece of 5mm 304 stainless steel plate which i have had rolled up to give a 20 inch diameter and 34 inches long.
I will be fabricating a FB 18 inches wide, can some one please help with dimensions of FB and throat size i should be aiming for.
Sorry for the newb questions this is all new to me, i am a metal fabricator by trade so this will not be to hard for me to fabricate. It is my intention to make this completely out of stainless steel.
Just want to make sure i have it all sweet

Gray mate & welcome, you've definitely come to the right place, these guys are full of great knowledge & friendly as hell.
Chuck all the dimensions you have in the Pit Calculator, it will give you all the info you need & the guys here will explain anything you don't understand.
I haven't seen a smoker made entirely out of SS, should look pretty sweet! :kewl:

I ran it through the pit calculator and came up with
Cooking Chamber
Diameter: 20
Length: 34

Fire Box
Width 18
Length 16
Height 16

Chimney 3 inch

Firebox Size % Diff 129.42% This seem to high or is it ok

Just getting confused with what should be the correct throat size.

Welcome to the crew!

I would reduce the FB to about 105% or just a little more. As for the throat opening look at Pete Mazz signature, he has some great helps for that process. They include various options in shapes.

Making memories.

My thinking is to make my fire box 18 inches high then i will bring the grate up from the bottom by 3 inches, which then allows for the intake to flow under the coals. Then i will put another plate 1 inch down from the top to keep the heat away from the outside of fire box.
So it will be 18 inches wide x 16 inches long x 14 inches high this give me Firebox Size % Diff 113.24%
With having the grate 3 inches from the bottom it will allow me to place gas burner underneath to get charcoals started.

Hope this makes sense and please correct me if i am wrong with my thinking.
Using Pete Mazz signature it tells me that the throat will have a Calculated Area: 61.418

Welcome! Use 4" diameter for the chimney if you can.

So you're going to just use charcoal?

No going to use both charcoal and wood.
Just another question how much of a opening do i allow at the end of baffle plate. 2 or 3 inches or should it be more.

Welcome, maybe this will help with pictureshttp://smokerbuilder.com/forums/viewtopic.php?f=50&t=1874 and to answer your question the BP gap should be the same size as your throat or just a little smaller(25%max)

Ok here is a few pics , feel free to correct me if i am doing this all wrong.
I have already made the Stack from 3 inch pipe will try first and if i need will modify later. What happens if the stack is to small ?
The throat distance is 5 inches but will be slightly smaller when i place a heat baffle 1inch bellow the top of FB, so will end up 4 inches high throat.

3" pipe restricts the airflow a little too much.

I get a 33 sq in throat needed for your FB size. That equates to only a 3 1/4" high cut-out. 4" would be 45 sq in.

Thanks for the advice, :oopssign: will make the change to a 4 inch stack, will completely make a new end plate.
Just another question regarding height of stack outlet, should it be as high as it can go or should it be lower down.
My brain is starting to hurt thinking about getting this right. :chef:

Did some more calc's i think i have it now.
FB 16 W x 16 L x16 H gives me Firebox Size % Diff 115.04%
Rec. Throat Size 32.77 in²
Chimney Length 16.31 in. ( seems very short )

With this 4 inch stack does this need to be the same thickness as the chamber or could it be tube.

It can be thinner, the stack measurement only counts from the top of the CC and up not the 90 you are going to add to it. I like my stacks on the top as far off the cooking grate as possible so dripping on food from accumulated stuff in the doesn't happen.

All stainless? Impressive.....both in looks and skill. Little interested to see how it "seasons" after a few cooks.

Great start.

Fixed stack size to 4 inch and now have a 3 1/2 inch throat, also started making flange for door.
Awaiting thermometers to arrive , i want to weld in sockets for thermometers in before i finish cutting door out.
Will start on hinges tomorrow.

Plan on getting it bead blasted inside and outside, so should season up ok.
The trouble with making from Stainless is that you always want to keep it clean

Because I built a stainless smoker! My wife works for a SS coil distributor and I got it all for free! I just wish I could weld as good as you.

We love pics around here.

Here's the final thread on my build. I had so much trouble welding the 19G SS on the interior that I wound up buying 14G steel.
