Well, it's been just over three weeks since my missus suggested we open a restaurant & I don't know how it happened(it's all been a bit of a blur) but tomorrow we open! We've had a bit of luck with the whole thing, basically the place is turnkey & all we had to do was get the food & do all the paperwork. It's a little cafe/restaurant about 800m down the road that closed in September & the owners asked us if we wanted to rent it off them & three weeks later we are restaurant owners. I've been up all night smoking 40 thighs, 2 butts & 25 salmon fillets & I don't know how you comp guys do it, I'm knackered!! Both my smokers are pumping hard & the GF has been going for about 20hrs now, used about 10kg of lump but that's all good. I have to thank all of the guys here for all the help you've given me with both my builds & recipe tips & if any of you make it down to Mole Creek come in to The Pepperberry Cafe & I'll shout you a local beer & a feed, maybe a pulled pork pizza or smoked salmon & homemade cream cheese on homemade sourdough. Anyhoo, I think I'm babbling now, possibly cause I've been awake for about 27hrs, but the point I'm trying to make is THANK YOU SMOKERBUILDER FAMILY, you guys rock! :beer: :kewl: :wsm: :D

Thanks for all your support guys, we opened at 9 (still hadn't slept then & still haven't slept now) & at 11 we got smashed all the way till 3, I'm tired, ecstatic & relieved all at the same time. I'm going to go home & sleep now, so I'll see you all in a couple of days. =))

You do realise that long hours in the food industry are standard don't you. My future son-in-law is a chef and he grafts long and unsocialble hours.
But I wish you all the very best in your endeavour. I'm sure you'll make a real go of it.

Hahaha, yeah I know there's some long hours coming but the other day was a 34hr mega shift!! But being the boss I can take time off as soon as I train enough good people, that's the plan anyway, lol. Today was just as good as yesterday, flat out most of the day, I hope that it's a continuing trend. :kewl:

Thanks DC, I have the same sticker on my smoker, must be a sign! :beer:

& im really sorry about the lack of Qview, I wasn't really thinking straight, or seeing straight for that matter, at 3:30 in the morning. I will definitely make sure I get some pics on the next run, which should be fairly soon after today, chicken & pulled pork rolls did really well today. :kewl: :wsm:
