First Smaoked Pork Butt

Post by whtsmoke » July 9th, 2017, 2:44 pm

DSCF2813 (640x359).jpg
Last week it was a chicken today it was a pork butt, started about 4am getting things ready and it went on at 5:30am and I took it off at 2pm. It held temp at around 315 to 320 all day, added charcoal as I went. it weighed in at 8.155 pounds before and I got 6 1/2 pounds of meat off of it(weighed).
I think i could have put a few more splits of Hickory on to give a bit more flavor but as I was pulling I had to taste, ok eat as I went and it tasted fantastic. I know it didn't happen without pictures so here you go and please tell me what you think and what I did right or wrong. I love constructive criticism.

Looks pretty good to me...

Learning generally boils down to "Repetition or the avoidance of pain", some people learn by doing, some by watching and some just have to pee on the electric fence.

Whether you think that you can, or that you can't, you are usually right. Henry Ford

I don't cook that hot, but I'm not saying you shouldn't. I also wrap mine so it will stay really wet.

Most of the butts I get here are in the 10-12lb range I cook around 225-275 depending on how busy I get and let it climb and fall cook time takes around 10 hrs and the last 4-5 hrs is triple wrapped in foil with apple juice. This method hasn't let me down. I will spray them every hr with apple juice and cider vinegar.
