It doesn't hurt to season the outside of your pit. It does make cleaning a little bit more laborious but if you spent the time and money to build a nice smoker what's a few extra minutes getting it cleaned up right. I use regular old canola oil nothing fancy for the inside. Once the steel is good and hot I take a little of the same oil and polish if you will the entire outside. Seals the steel shines it up and I think helps protect the outside. Not to mention it helps on the cleanup as I'm a messy cook lol. Boils down to personal preference. You have a real nice yard smoke pal enjoy it.

She is all seasoned up and ready for Christmas Eve. I have a son who asked Santa for some smoked ribs. I was going to smoke a ham as wellImageImageImageImage

I even threw a little meat on there towards the end of a 6 hour season. I know, I know why no q-view? I didn’t figure hot dogs for the kids would get you guys excited. I didn’t even taste them just fed them to the kids with some Mac and cheese.

Question: has anyone built their own temp probe holder for a temp probe to get an accurate reading on the internal temp reading? I know they sell them but just curious if anyone has attempted it.

I've used wooden clothes pins before to hold the probe above the grate.

I used hamburger grease. You could melt a big jar of krisco and use that if you want. As far as the outside I don't think you need to season it. I would paint the outside with high temp paint.

I just take any ole chunk of smoking wood and drill a hole in it at a slight angle so the probe goes in and the lead is lower than the tip so moisture doesn't get in the probe. I have several of them lying around, I really like them because you can set it any where or just move it over without any hassle.

I got the gauges in the mail today and got them installed. I have gone through the check list and we are officially a go. I am picking up some ribs in the morning and the ham is in the fridge ready for the maiden voyage/smoke on Sunday. I will be sure to take some q-view photos to let you guys know how it goes. Very excited!!! I feel like a kid at Christmas again!!!!!!! On that note Merry Christmas gents!!!!!!

Ahh RC, not simple minded, just looking for the simplest solution.

Good morning gents, it’s a brisk morning here in the south west region. So last night as I was shopping for ribs my eyes locked onto a nice looking 15 lbs brisket, it looked a little lonely so I put him in my cart for a ride. This morning he is snuggling in on the iron dragon for tomorrow’s dinner. I figured what would go great with a ham and ribs???? Brisket of course.
So far so good with controlling the temp on the dragon.
Trusts me pics are coming........I will snap a few later when I put the ribs on, stay tuned in!!!!!!!
