New to the site

Post by jaycooksdirtt » July 31st, 2012, 11:41 pm

New to the site, looking forward to picking the brains for great ideas for our industrial smoker and grill complex for the boys and girls @ work. The folks in our metal/ maintenance department are going to be helping me build a large smoker and charcoal/ wood burning grill. looking to feed the 300 employees we feed on a daily basis, so it'll have to have some serious capacity! and some serious weight too! currently looking at a few designs trying to refine the specs we will have to operate with, looking forward to some great convo!

These guys know metal and they know smokers. I'm just here for the Que. :D
Looking forward to following the build, don't forget to post some pics

If it can't be smoked .... try frying it. It that don't work, it's probably best just left alone

BBQ is just smoke and beers!
Usually more beers than smoke.

We're considering a few plans for the firebox, charcoal, wood, electric biscuit pellets, and such, we will definitely need to insulate the whole firebox and cookhouse due to the 6 months of winter here in Calgary. Leaning towards charcoal and wood we don't think that the electric system would provide enough heat for the size of the cooking chamber. Looking @ building the frame out of 2x2 angle iron rf 4'x 4'x 6' cook-chamber in 12 gauge. The chargrill is going to be pretty basic 4'x8', big enough for whole hogs, steaks for 300, and plenty of pancakes on the removable griddle for the stampede/ rodeo days! hoping to keep the price in @ around a grand so I can get larger capacity grinder/ sausage stuffer to really crank out some tasty bits, currently got 40 kg of beef belly curing for bacon, hmmm beef bacon!

Thanks for the warm welcomes, can't wait for future chat's!

Jay
