I have access to hogs thru a local supplier. I was thinking they buy the pig ill cook it. Limiting my responsability just dont know what a fair price would be. Or at least a ball park figure to work from.
I made a little cheat sheet that works for most stuff. I buy the stuff and this is what I charge. If I take my rig it is another $100.00 and $25.00 per hour on site.
There is an estimated weight to the right of each item. I don't do whole hogs. I don't even like the idea.

This has changed a lot since then. It is based on 1/3# per person. I charge by the item now just 100.00 for brisket and 65 for butt and 30 for sides and so on.
