I got the thermo Installed and got the UDS seasoned up today! (note: New thermometer, has to go back it is off about 80 degrees)
Put about 10 lbs of Royal oak lump in the basket with some apple and paecan chips, and lit that with a chimney full of RO lump.
Got it up to 375 and kept it around there for 3 hours.
After 3 hours, i backed the temp down and put some thighs on
After about 2 hours thighs come off. My they are lookin good, if I can say so.
I have to say that controlling temp is relatively easy, almost set it and forget it. I just have to learn to leave it alone!

anyway, I really like the double decker rack we built and i think you will be real happy with it for catching drippings or a waterpan. I see a pink UDS in your future tho for your wife LOL
BTW, the thermo on the front should be calibrate-able
usually the thermo will have a nut or a place to grab it with pliers on the back side then you turn the housing the direction needed to adjust the needle.
