Cover with brown sugar, kosher salt for 24 hours in the fridge rinse it off sprinkle with pepper and garlic powder let it dry for about 2 hours in the fridge then smoke at 180 for about an hour. I cant wait until he goes fishing this year I told him half his catch is mine. :rulz:

Yep its ready to eat, I vacuum pack then freeze it. good for a long time. I dont smoke it real heavy the salt and brown sugar makes a great flavor.

Billy, I liked the look of them so much!, I had a go at it. well a quick version that is!, salt and sugar for 4 hours and rub for 1hr and cooked in my weber genisis for about 80 mins, very nice!, Thanks!
