Also in the northern climate and just built a 1/8" 30 gallon out of a 100 lb propane tank! Cold rain or snow or sub-zero temps with winds might benefit with a welding blanket over the cook chamber. The more convective the build the less the steel thickness will matter as the heat is so rapidly replenished, so-to-speak.
