Legacy 250 build questions

I recently bought the plans for the 250, I'm a little confused on the cooker door. I believe the plans call for cutting out the whole quadrant for the doors. On some of the videos I've seen frank do the fire box was cut out before he did his top dead center. In that method or build it would push or rotate the door away from the factory bungs or valve holes to get the whole quadrant for a door. I'm not against a smaller door I just don't want to wreck a good tank. Thanks Luke
